Peanut Noodles

**** Incredibly simple to make, but absolute devine (although maybe it's because we're bias and love peanut sauces too much...)
• 225 g spaghetti
• 1 bunch green onions, sliced (white parts only)
• 2 tbsp sesame oil
• 1 tsp minced fresh ginger root
• mixed vegetables (we use mushrooms and bell peppers but you could also do baby corn, broccoli, zucchini, etc.)
• 1/3 cup (80 ml) peanut butter
• ¼ cup (60 ml) soy sauce
• ¼ cup (60 ml) hot water
• 1 tbsp cider vinegar
• 1 tsp white sugar
• ¼ tsp crushed red pepper flakes
1.Cook pasta in a large pot of boiling water until done. Drain.
2.Meanwhile, combine oil and onions in a small skillet. Sauté over low heat until tender. Add ginger; cook and stir for 1 to 2 minutes.
3. Stir in mixed vegetables. Mix in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes. Remove from heat.
4.Toss noodles with sauce, and serve.

Mmmmmm, peanut sauce, so expensive to buy, but realively in expensive to make! After being inspired by your posting, I concocted my own version with peanut butter, soy sauce, chinese BBQ sauce, red rice viniger, seasame oil, lemon juice, chopped garlic and ginger, chili sauce and sugar (pretty similar to yours) and cooked it up with many many different things. My favorite would have to be any veggie combo with a handfull of pine nuts (don't cook them or they get all mushy!). Since then, I've made and industrial sized batch and now have jars of the stuff. I'm planning on truning my kitchen into a small peanut sauce factory and giving them away for christmass :) I find slicing the ginger into thin "sticks" is nice as you can eat it without it being overpowering.
Oh, and one last thing, I really like it with any sort of rice noodles, especially the flat ones, mmmmmmm noodles!
